Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 cup frozen chopped spinach, thawed and drained
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cream cheese, sour cream, Parmesan cheese, minced garlic, onion powder, salt, black pepper, and red pepper flakes. Mix until smooth and well combined.
  3. Stir in the chopped spinach and artichoke hearts until evenly distributed.
  4. In a large oven-safe skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5 minutes on each side, until golden brown but not fully cooked through.
  5. Remove the skillet from heat and spread the spinach-artichoke mixture evenly over the chicken breasts. Top with shredded mozzarella cheese.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the cheese is bubbly and golden.
  7. Let the dish cool for a few minutes before serving.

Notes

  • For a lighter version, substitute Greek yogurt for sour cream and use low-fat cream cheese.
