A delicious and easy-to-make creamy spinach artichoke chicken bake that is perfect for any dinner.

- 3 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 cup frozen chopped spinach, thawed and drained
- 1 cup canned artichoke hearts, drained and chopped
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the cream cheese, sour cream, Parmesan cheese, minced garlic, onion powder, salt, black pepper, and red pepper flakes. Mix until smooth and well combined.
- Stir in the chopped spinach and artichoke hearts until evenly distributed.
- In a large oven-safe skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5 minutes on each side, until golden brown but not fully cooked through.
- Remove the skillet from heat and spread the spinach-artichoke mixture evenly over the chicken breasts. Top with shredded mozzarella cheese.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the cheese is bubbly and golden.
- Let the dish cool for a few minutes before serving.
Notes
- For a lighter version, substitute Greek yogurt for sour cream and use low-fat cream cheese.
- Add chopped sun-dried tomatoes or olives for an extra burst of flavor.
