- 1 onion, diced
- 2 carrots, diced
- 2 celery sticks, diced
- 3 cloves garlic, minced
- 4 cups seafood stock
- 1 cup heavy cream
- 1 pound shrimp, peeled and deveined
- 1 pound white fish, diced
- 1 cup corn kernels
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onion, carrots, and celery, and sauté until the vegetables are tender.
- Add the garlic and cook for an additional minute.
- Pour in the seafood stock and bring to a simmer.
- Stir in the heavy cream, shrimp, fish, corn, and Old Bay seasoning.
- Cook until the seafood is cooked through, about 5-7 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a thicker chowder, you can add a slurry of cornstarch and water.
- Feel free to substitute sea bass or salmon for the white fish.
