A deliciously creamy side dish made with fresh spinach, perfect for any meal.


Ingredients

  • 2 pounds fresh spinach, washed and trimmed
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/4 cup cream cheese, softened

Instructions

  1. In a large pot, bring water to a boil. Add the spinach and blanch for 2-3 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and squeeze out excess moisture. Chop the spinach coarsely and set aside.
  2. In a large skillet, melt the butter and olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  3. Lower the heat and pour in the heavy cream. Stir in the cream cheese and let it simmer for about 3-4 minutes until slightly thickened.
  4. Add the chopped spinach to the skillet and mix well. Stir in the Parmesan cheese, nutmeg, salt, and pepper. Cook for another 2-3 minutes until heated through and creamy.
  5. Taste and adjust seasoning if necessary. Serve warm as a side dish.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream and reduce the amount of cream cheese.
  • Add a pinch of red pepper flakes for a bit of heat or include sautéed mushrooms for added flavor and texture.
