Description
A deliciously creamy side dish made with fresh spinach, perfect for any meal.
Ingredients

- 2 pounds fresh spinach, washed and trimmed
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1/4 cup cream cheese, softened
Instructions
- In a large pot, bring water to a boil. Add the spinach and blanch for 2-3 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and squeeze out excess moisture. Chop the spinach coarsely and set aside.
- In a large skillet, melt the butter and olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.
- Lower the heat and pour in the heavy cream. Stir in the cream cheese and let it simmer for about 3-4 minutes until slightly thickened.
- Add the chopped spinach to the skillet and mix well. Stir in the Parmesan cheese, nutmeg, salt, and pepper. Cook for another 2-3 minutes until heated through and creamy.
- Taste and adjust seasoning if necessary. Serve warm as a side dish.
Notes
- For a lighter version, substitute half-and-half for the heavy cream and reduce the amount of cream cheese.
- Add a pinch of red pepper flakes for a bit of heat or include sautéed mushrooms for added flavor and texture.
