A delightful recipe for cranberry mousse cups that combines the tartness of cranberries with the creaminess of whipped cream and cream cheese.

- 1 cup fresh or frozen cranberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup cream cheese, softened
- 1 tablespoon powdered sugar
- Fresh cranberries and mint leaves for garnish (optional)
Instructions
- In a small saucepan, combine the cranberries, granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes, or until the cranberries have burst and the mixture is thickened. Remove from heat and let cool completely.
- In a large mixing bowl, beat the heavy whipping cream, vanilla extract, and salt until soft peaks form.
- In another bowl, beat the softened cream cheese and powdered sugar together until smooth.
- Gently fold the cooled cranberry mixture into the cream cheese mixture until well combined.
- Carefully fold in the whipped cream until no streaks remain.
- Spoon the mousse into serving cups and refrigerate for at least 2 hours to set.
- Before serving, garnish with fresh cranberries and mint leaves if desired.
Notes
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
- Add a splash of orange juice or zest for a citrus twist in the mousse.
