Instructions
- In a medium saucepan, combine the milk, sugar, cocoa powder, cornstarch, ginger, cinnamon, nutmeg, and salt.
- Heat the mixture over medium heat, stirring continuously until it thickens and starts to bubble, about 5-7 minutes.
- Once thickened, remove the saucepan from heat and mix in the vanilla extract and molasses until well blended.
- Transfer the pudding mixture into individual cups or a large serving bowl.
- Cover the pudding with plastic wrap, pressing it directly against the surface to avoid a skin forming on top.
- Place the pudding in the refrigerator and let it chill for a minimum of 2 hours or until set.
- When ready to serve, add a generous swirl of whipped cream on top of each pudding and finish with a sprinkle of crushed gingerbread cookies.
