A delightful dessert featuring a creamy vanilla ice cream loaf swirled with a berry mixture and topped with crunchy cornflakes.

- 2 cups vanilla ice cream, softened
- 1 cup mixed berries (strawberries, blueberries, raspberries), fresh or frozen
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup cornflakes, crushed
- 1/4 cup unsalted butter, melted
- 1/4 teaspoon salt
Instructions
- In a medium saucepan over medium heat, combine the mixed berries and granulated sugar. Cook for about 5-7 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly. Remove from heat and stir in the vanilla extract. Allow to cool completely.
- In a large mixing bowl, fold the softened vanilla ice cream with the cooled berry mixture until just swirled together. Be careful not to overmix; you want to see ribbons of berry throughout.
- In another bowl, mix the crushed cornflakes, melted butter, and salt until well combined. Set aside.
- Pour half of the berry swirl ice cream mixture into a loaf pan. Sprinkle half of the cornflake mixture on top. Add the remaining ice cream mixture and finish with the rest of the cornflakes on top.
- Cover the loaf pan with plastic wrap and freeze for at least 4 hours or until firm.
- To serve, remove the ice cream loaf from the freezer and let it sit at room temperature for about 5 minutes before slicing.
Notes
- For a chocolate twist, swirl in some chocolate syrup along with the berry mixture.
- Try using different flavored ice creams, like strawberry or raspberry, for a unique taste.
