- 3 pounds bone-in, skin-on chicken thighs
- 1 cup garlic cloves (about 2–3 heads of garlic)
- 1/2 cup olive oil
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced
- Fresh thyme sprigs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small saucepan, combine the garlic cloves and olive oil. Heat over low heat until the garlic is soft and fragrant, about 15-20 minutes. Do not let it brown.
- While the garlic is confiting, season the chicken thighs with salt, pepper, and thyme.
- In a large oven-safe skillet or roasting pan, arrange the seasoned chicken thighs skin-side up. Pour the confit garlic and oil over the chicken, ensuring the garlic is evenly distributed.
- Place lemon slices on top of the chicken thighs.
- Roast in the preheated oven for 45-55 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (74°C).
- Let the chicken rest for 5-10 minutes before serving. Garnish with fresh thyme sprigs if desired.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the garlic and oil mixture.
- Serve with roasted vegetables or a fresh salad for a complete meal.
