- 1 cup strong brewed coffee, cooled
- 1 cup coconut milk
- 1 cup sweetened condensed milk
- 1 cup white rum
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 24 ladyfinger cookies
- Cocoa powder, for dusting
- Shredded coconut, for garnish (optional)
Instructions
- In a large mixing bowl, combine the cooled coffee, coconut milk, sweetened condensed milk, white rum, vanilla extract, and ground cinnamon. Whisk until well combined.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Arrange half of the soaked ladyfingers in a single layer in a 9×9-inch baking dish.
- Spread half of the coconut mixture over the layer of ladyfingers, smoothing it out evenly.
- Repeat the process with the remaining ladyfingers, dipping them in the coffee mixture and layering them on top of the first layer. Spread the remaining coconut mixture over the second layer of ladyfingers.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.
- Before serving, dust the top with cocoa powder and sprinkle with shredded coconut, if desired.
Notes
- For a non-alcoholic version, substitute the white rum with additional coconut milk or a coconut-flavored syrup.
- Add a layer of chocolate shavings or a drizzle of chocolate sauce between the layers for an extra indulgent twist.
