Instructions
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Pour in the coconut milk, lime juice, fish sauce, brown sugar, and salt. Stir to combine and bring the mixture to a gentle simmer.
- Carefully add the cod fillets to the skillet, making sure they are submerged in the coconut milk. Cover the skillet and let the fish poach for about 8-10 minutes, or until the cod flakes easily with a fork.
- Once cooked, remove the skillet from heat and sprinkle the lime zest over the cod.
- Serve the poached cod garnished with fresh cilantro and lime wedges on the side.
