  • 1 can (14 ounces) coconut milk
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 lime, zested and juiced
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Pour in the coconut milk, lime juice, fish sauce, brown sugar, and salt. Stir to combine and bring the mixture to a gentle simmer.
  3. Carefully add the cod fillets to the skillet, making sure they are submerged in the coconut milk. Cover the skillet and let the fish poach for about 8-10 minutes, or until the cod flakes easily with a fork.
  4. Once cooked, remove the skillet from heat and sprinkle the lime zest over the cod.
  5. Serve the poached cod garnished with fresh cilantro and lime wedges on the side.
