- 1 cup coconut oil, melted
- 1 cup creamy peanut butter
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1/2 cup shredded unsweetened coconut (optional)
Instructions
- In a medium mixing bowl, combine the melted coconut oil and peanut butter. Stir until well blended.
- Add honey (or maple syrup), vanilla extract, and salt to the mixture. Mix until smooth and fully combined.
- Sift in the cocoa powder and stir until the mixture is uniform. If using, fold in the shredded coconut.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal. Pour the fudge mixture into the dish and spread it evenly.
- Refrigerate for at least 2 hours or until firm.
- Once set, lift the fudge out of the dish using the parchment paper and cut into squares.
