  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup shredded unsweetened coconut (optional)

Instructions

  1. In a medium mixing bowl, combine the melted coconut oil and peanut butter. Stir until well blended.
  2. Add honey (or maple syrup), vanilla extract, and salt to the mixture. Mix until smooth and fully combined.
  3. Sift in the cocoa powder and stir until the mixture is uniform. If using, fold in the shredded coconut.
  4. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal. Pour the fudge mixture into the dish and spread it evenly.
  5. Refrigerate for at least 2 hours or until firm.
  6. Once set, lift the fudge out of the dish using the parchment paper and cut into squares.
