Ingredients

  • 1 cup farro
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the farro under cold water.
  3. In a pot, combine farro and water, bring to a boil, then reduce heat, cover, and cook for 30-40 minutes until tender.
  4. Drain farro and spread on a baking sheet to toast in the oven for 10-15 minutes.
  5. In a large bowl, combine toasted farro, tomatoes, cucumber, red onion, feta, and parsley.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over the salad and toss to combine.
  8. Serve immediately or refrigerate to let flavors meld.
