Ingredients

- 1 cup farro
- 2 cups water
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the farro under cold water.
- In a pot, combine farro and water, bring to a boil, then reduce heat, cover, and cook for 30-40 minutes until tender.
- Drain farro and spread on a baking sheet to toast in the oven for 10-15 minutes.
- In a large bowl, combine toasted farro, tomatoes, cucumber, red onion, feta, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve immediately or refrigerate to let flavors meld.
Notes
- For a vegan version, omit the feta cheese.
- Adjust the vegetables based on season and preference.
