- 2 cups pecans, chopped
- 1 cup unsweetened shredded coconut
- 1/2 cup almond flour
- 1/4 cup butter, melted
- 1/4 cup erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped pecans, shredded coconut, almond flour, erythritol, cinnamon, nutmeg, and salt. Mix well.
- In a separate bowl, whisk together the melted butter and vanilla extract.
- Pour the butter mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the mixture evenly onto the prepared baking sheet, pressing it down firmly to form clusters.
- Bake for 15-20 minutes, or until golden brown, stirring halfway through to ensure even baking.
- Remove from the oven and let it cool completely on the baking sheet. The granola will harden as it cools.
- Once cooled, break into clusters and mix in the sugar-free chocolate chips if using.
