A delicious and healthy treat made with Greek yogurt, fresh raspberries, and dark chocolate.

- 2 cups plain Greek yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil (optional)
- Pinch of salt
Instructions
- Line a baking sheet with parchment paper for easy removal.
- In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until smooth and well combined.
- Spread the yogurt mixture evenly onto the prepared baking sheet, about 1/2 inch thick.
- Scatter the fresh raspberries over the yogurt layer, pressing them in slightly to ensure they stick.
- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
- Drizzle the melted chocolate over the yogurt and raspberries in a decorative pattern.
- Place the baking sheet in the freezer for at least 4 hours or until the yogurt is completely frozen.
- Once frozen, break the bark into pieces and serve immediately or store in an airtight container in the freezer for up to 2 weeks.
Notes
- For a crunchier texture, add chopped nuts or granola on top before freezing.
- Try substituting the raspberries with other berries like strawberries or blueberries for a different flavor profile.
