  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil (optional)
  • Pinch of salt

Instructions

  1. Line a baking sheet with parchment paper for easy removal.
  2. In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until smooth and well combined.
  3. Spread the yogurt mixture evenly onto the prepared baking sheet, about 1/2 inch thick.
  4. Scatter the fresh raspberries over the yogurt layer, pressing them in slightly to ensure they stick.
  5. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
  6. Drizzle the melted chocolate over the yogurt and raspberries in a decorative pattern.
  7. Place the baking sheet in the freezer for at least 4 hours or until the yogurt is completely frozen.
  8. Once frozen, break the bark into pieces and serve immediately or store in an airtight container in the freezer for up to 2 weeks.
