Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 4 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the water, butter, salt, and sugar. Bring to a boil over medium heat.
  3. Once boiling, remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.
  4. Let the dough cool for about 5 minutes. Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  5. Using a pastry bag or a spoon, pipe or scoop small mounds of dough (about 1.5 inches wide) onto the prepared baking sheet, leaving space between each mound.
  6. Bake for 20-25 minutes or until the buns are puffed and golden brown. Do not open the oven door during baking.
  7. Remove from the oven and let cool completely on a wire rack.
  8. While the choux buns cool, whip the heavy cream with vanilla extract until soft peaks form.
  9. Once the buns are cool, slice them in half and fill each with whipped cream.
  10. In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  11. Dip the tops of the filled choux buns into the chocolate glaze and let the excess drip off.
  12. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

  • For a lighter option, substitute half of the heavy cream with Greek yogurt.
  • Consider infusing the whipped cream with a tablespoon of espresso powder or a splash of almond extract for added flavor.
