Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon instant espresso powder
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas and melted coconut oil. Stir until well mixed.
  3. Add the granulated sugar, brown sugar, beaten egg, and vanilla extract to the banana mixture. Mix until combined.
  4. In a separate bowl, whisk together the baking soda, salt, all-purpose flour, cocoa powder, and instant espresso powder.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  6. Fold in the chocolate chips and walnuts, if using.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a richer flavor, add 1/2 teaspoon of cinnamon to the dry ingredients.
  • Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
