Description

Chocolate Cherry Upside Down Cake is a delicious dessert that combines the rich flavors of chocolate and cherries, making it a must-try for any chocolate lover.

Ingredients

Scale
  • 2 cups fresh or frozen pitted cherries
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar, packed
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter.
  2. In a medium bowl, combine the cherries and granulated sugar. Let them sit for about 10 minutes to release their juices.
  3. Pour the melted butter into the prepared cake pan and spread it evenly across the bottom. Sprinkle the brown sugar over the melted butter.
  4. Arrange the cherries evenly over the brown sugar in the pan.
  5. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  6. In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract until well combined.
  7. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  8. Pour the batter over the cherries in the cake pan, spreading it evenly.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes. Then, carefully invert it onto a serving plate, so the cherries are on top.

Notes

  • For an extra layer of flavor, add 1/2 teaspoon of almond extract to the batter.
