Chickpea Truffles are a healthy and delicious treat made with chickpeas, peanut butter, and oats, perfect for satisfying your sweet tooth.

- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup rolled oats
- 1/2 cup dark chocolate chips (optional)
- 1/2 cup shredded coconut (optional)
Instructions
- In a food processor, combine the chickpeas, peanut butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Blend until smooth and creamy.
- Add the rolled oats to the mixture and pulse until just combined. If using, fold in the dark chocolate chips or shredded coconut.
- Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the truffles on a baking sheet lined with parchment paper.
- Once all the mixture is rolled into balls, refrigerate the truffles for at least 30 minutes to firm up.
- Serve chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to one week.
Notes
- For a different flavor, try adding a tablespoon of cocoa powder for chocolate-flavored truffles or a pinch of sea salt on top for a sweet-salty combination.
- Substitute almond butter or sunflower seed butter for the peanut butter to accommodate nut allergies.
