Chickpea Truffles are a healthy and delicious treat made with chickpeas, peanut butter, and oats, perfect for satisfying your sweet tooth.


Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 1/2 cup dark chocolate chips (optional)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. In a food processor, combine the chickpeas, peanut butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Blend until smooth and creamy.
  2. Add the rolled oats to the mixture and pulse until just combined. If using, fold in the dark chocolate chips or shredded coconut.
  3. Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the truffles on a baking sheet lined with parchment paper.
  4. Once all the mixture is rolled into balls, refrigerate the truffles for at least 30 minutes to firm up.
  5. Serve chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to one week.

Notes

  • For a different flavor, try adding a tablespoon of cocoa powder for chocolate-flavored truffles or a pinch of sea salt on top for a sweet-salty combination.
  • Substitute almond butter or sunflower seed butter for the peanut butter to accommodate nut allergies.
