  • 1/2 teaspoon black pepper

  • 1 teaspoon paprika
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 lemon, cut into wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  3. In a large oven-safe skillet, heat the duck fat over medium-high heat until melted and hot.
  4. Season the chicken thighs with salt, black pepper, garlic powder, paprika, and rosemary on both sides.
  5. Carefully place the chicken thighs skin-side down in the hot duck fat. Sear for about 5-7 minutes until the skin is golden brown and crispy.
  6. Flip the chicken thighs over and transfer the skillet to the preheated oven.
  7. Roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  8. Remove from the oven and let the chicken rest for 5 minutes before serving. Serve with lemon wedges.
