- 1/4 cup duck fat
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 lemon, cut into wedges (for serving)
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels to ensure crispy skin.
- In a large oven-safe skillet, heat the duck fat over medium-high heat until melted and hot.
- Season the chicken thighs with salt, black pepper, garlic powder, paprika, and rosemary on both sides.
- Carefully place the chicken thighs skin-side down in the hot duck fat. Sear for about 5-7 minutes until the skin is golden brown and crispy.
- Flip the chicken thighs over and transfer the skillet to the preheated oven.
- Roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Remove from the oven and let the chicken rest for 5 minutes before serving. Serve with lemon wedges.

- For added flavor, marinate the chicken thighs in a mixture of olive oil, lemon juice, and herbs for a few hours before cooking.
