Description

A rich and creamy chicken liver mousse enriched with bacon fat, perfect for spreading on toast or crackers.


Ingredients

  • 1 pound chicken livers
  • 1/2 pound bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon brandy or cognac
  • 1/2 teaspoon thyme

Instructions

  1. In a skillet, cook the bacon over medium heat until crisp. Remove and drain on paper towels.
  2. In the bacon fat, sauté the onions and garlic until soft.
  3. Add the chicken livers, salt, pepper, and thyme to the skillet; cook until the livers are no longer pink.
  4. Add the brandy and cook for another minute.
  5. Transfer the mixture to a food processor, add the butter, and blend until smooth.
  6. Chill in a bowl, then serve with the crispy bacon crumbled on top.

Notes

  • For a smoother texture, strain the mixture through a sieve after blending.
  • Serve the mousse with crusty bread or crusty crackers.
