A rich and creamy chicken liver mousse enriched with bacon fat, perfect for spreading on toast or crackers.
Ingredients

- 1 pound chicken livers
- 1/2 pound bacon
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon brandy or cognac
- 1/2 teaspoon thyme
Instructions
- In a skillet, cook the bacon over medium heat until crisp. Remove and drain on paper towels.
- In the bacon fat, sauté the onions and garlic until soft.
- Add the chicken livers, salt, pepper, and thyme to the skillet; cook until the livers are no longer pink.
- Add the brandy and cook for another minute.
- Transfer the mixture to a food processor, add the butter, and blend until smooth.
- Chill in a bowl, then serve with the crispy bacon crumbled on top.
Notes
- For a smoother texture, strain the mixture through a sieve after blending.
- Serve the mousse with crusty bread or crusty crackers.
