A rich and flavorful bone broth that has been charred for depth of flavor.
Ingredients

- 4 pounds beef bones
- 2 onions, quartered
- 4 carrots, chopped
- 4 celery stalks, chopped
- 2 heads of garlic, halved
- 1 bunch fresh thyme
- 2 bay leaves
- 1 tablespoon black peppercorns
- 12 cups water
Instructions
- Preheat the oven to 450°F (232°C).
- Place the beef bones in a single layer on a roasting pan and roast for 30-40 minutes until well browned.
- Add the roasted bones to a large pot and add onions, carrots, celery, garlic, thyme, bay leaves, peppercorns, and water.
- Bring the mixture to a boil, then reduce to a simmer.
- Simmer uncovered for at least 12 hours, adding more water as needed.
- Strain the broth through a fine-mesh sieve into another pot and discard solids.
- Cool the broth and refrigerate overnight to allow fat to solidify on top.
- Remove the fat layer before serving.
Notes
- For a clearer broth, use a fine cheesecloth while straining.
- This broth can be used as a base for soups or consumed on its own.
