Description

A rich and flavorful bone broth that has been charred for depth of flavor.

Ingredients

Scale
  • 4 pounds beef bones
  • 2 onions, quartered
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 2 heads of garlic, halved
  • 1 bunch fresh thyme
  • 2 bay leaves
  • 1 tablespoon black peppercorns
  • 12 cups water

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Place the beef bones in a single layer on a roasting pan and roast for 30-40 minutes until well browned.
  3. Add the roasted bones to a large pot and add onions, carrots, celery, garlic, thyme, bay leaves, peppercorns, and water.
  4. Bring the mixture to a boil, then reduce to a simmer.
  5. Simmer uncovered for at least 12 hours, adding more water as needed.
  6. Strain the broth through a fine-mesh sieve into another pot and discard solids.
  7. Cool the broth and refrigerate overnight to allow fat to solidify on top.
  8. Remove the fat layer before serving.

Notes

  • For a clearer broth, use a fine cheesecloth while straining.
