Description
A unique twist on brunch featuring a delicious combination of carrots and bacon in a savory quiche.
Ingredients
Scale
- 2 cups shredded carrots
- 6 slices of bacon, chopped
- 1 small onion, finely chopped
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1 cup whole milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 pre-made pie crust
Instructions
- Preheat the oven to 375°F.
- In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon grease in the skillet.
- Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
- In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
- Stir in the shredded carrots, cooked bacon, sautéed onions, and shredded cheddar cheese.
- Place the pie crust in a 9-inch pie dish. Pour the filling into the crust, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top.
- Let it cool for 10 minutes before slicing.
Notes
- For a twist, try adding spinach or kale for extra greens.
- You can substitute the cheddar cheese with feta or goat cheese for a different flavor profile.
- If you prefer a crustless quiche, simply grease the pie dish and pour the filling directly into it, baking for the same amount of time.
