Description

A unique twist on brunch featuring a delicious combination of carrots and bacon in a savory quiche.


Ingredients

  • 2 cups shredded carrots
  • 6 slices of bacon, chopped
  • 1 small onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 pre-made pie crust

Instructions

  1. Preheat the oven to 375°F.
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon grease in the skillet.
  3. Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  5. Stir in the shredded carrots, cooked bacon, sautéed onions, and shredded cheddar cheese.
  6. Place the pie crust in a 9-inch pie dish. Pour the filling into the crust, spreading it evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top.
  8. Let it cool for 10 minutes before slicing.

Notes

  • For a twist, try adding spinach or kale for extra greens.
  • You can substitute the cheddar cheese with feta or goat cheese for a different flavor profile.
  • If you prefer a crustless quiche, simply grease the pie dish and pour the filling directly into it, baking for the same amount of time.
