Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

Instructions

  1. In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.
  2. In a separate bowl, whisk together the granulated sugar, cornstarch, and salt until well combined.
  3. Gradually add the sugar mixture to the warm milk and cream, whisking continuously to prevent lumps.
  4. Continue to cook the mixture over medium heat, stirring constantly, until it thickens and starts to bubble, about 5-7 minutes.
  5. Once thickened, remove the saucepan from heat and stir in the vanilla extract and butter until fully melted and incorporated.
  6. Pour the pudding into individual serving dishes or a large bowl. Allow it to cool at room temperature for about 30 minutes, then cover with plastic wrap and refrigerate for at least 2 hours or until set.
  7. Before serving, you can optionally caramelize some sugar for a topping. In a small saucepan, heat 1/4 cup of granulated sugar over medium heat, stirring constantly until it melts and turns golden brown. Drizzle over the chilled pudding.

Notes

  • For a chocolate version, add 1/3 cup of unsweetened cocoa powder to the sugar mixture before combining with the milk.
