- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
Instructions
- In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.
- In a separate bowl, whisk together the granulated sugar, cornstarch, and salt until well combined.
- Gradually add the sugar mixture to the warm milk and cream, whisking continuously to prevent lumps.
- Continue to cook the mixture over medium heat, stirring constantly, until it thickens and starts to bubble, about 5-7 minutes.
- Once thickened, remove the saucepan from heat and stir in the vanilla extract and butter until fully melted and incorporated.
- Pour the pudding into individual serving dishes or a large bowl. Allow it to cool at room temperature for about 30 minutes, then cover with plastic wrap and refrigerate for at least 2 hours or until set.
- Before serving, you can optionally caramelize some sugar for a topping. In a small saucepan, heat 1/4 cup of granulated sugar over medium heat, stirring constantly until it melts and turns golden brown. Drizzle over the chilled pudding.
Notes
- For a chocolate version, add 1/3 cup of unsweetened cocoa powder to the sugar mixture before combining with the milk.
- Top with fresh fruit, such as berries or sliced bananas, for added flavor and texture.
