Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon sea salt
- 1 teaspoon onion powder
- 1 cup crumbled feta cheese
- 1 cup diced bell peppers
- 1/2 cup fresh parsley, chopped
- 3 large eggs
- 1/2 cup buttermilk
- 1/4 cup extra virgin olive oil
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
- In a spacious bowl, combine the flour, baking powder, sea salt, and onion powder, mixing well.
- Gently fold in the crumbled feta cheese, diced bell peppers, and chopped parsley until well incorporated.
- In a separate bowl, whisk the eggs, then blend in the buttermilk, olive oil, and lemon juice until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring just until combined; be careful not to overmix.
- Transfer the batter into the prepared loaf pan, leveling the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
Notes
- For added flavor, consider mixing in 1/2 cup of chopped olives.
- You can swap the feta for goat cheese for a creamier texture.
