  • 1/2 cup buttermilk
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan.
  2. In a spacious bowl, combine the flour, baking powder, sea salt, and onion powder, mixing well.
  3. Gently fold in the crumbled feta cheese, diced bell peppers, and chopped parsley until well incorporated.
  4. In a separate bowl, whisk the eggs, then blend in the buttermilk, olive oil, and lemon juice until smooth.
  5. Gradually add the wet mixture to the dry ingredients, stirring just until combined; be careful not to overmix.
  6. Transfer the batter into the prepared loaf pan, leveling the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
