- 2 pounds beef tripe
- 4 cups beef bone broth
- 1 cup onions, chopped
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon ginger, minced
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bay leaf
- 1 teaspoon salt
Instructions
- Clean the beef tripe thoroughly under cold water.
- In a large pot, heat the olive oil and sauté the onions and garlic until translucent.
- Add the ginger, soy sauce, black pepper, and salt, cooking for another minute.
- Introduce the tripe to the pot, stirring to coat it with the mixture.
- Pour in the beef bone broth and add the bay leaf.
- Bring to a boil, then reduce heat and simmer for 3 hours until the tripe is tender.
- Adjust seasoning if necessary and serve hot.
Notes
- This dish is best served with crusty bread for dipping.
- For a spicier version, add chili flakes to taste.
