Description

Delicious Boston Cream Pie Cookies that combine the flavors of a classic dessert in a delightful cookie form.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup vanilla pudding mix (instant)
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  5. Using a tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  7. While the cookies are cooling, prepare the vanilla pudding by whisking together the pudding mix and milk in a bowl for about 2 minutes until thickened.
  8. Once the cookies are cool, spread a layer of vanilla pudding on the bottom of half the cookies and sandwich with the remaining cookies.
  9. For the chocolate glaze, melt 1/2 cup of chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle or spread the melted chocolate over the top of the assembled cookies.
  10. Serve immediately or refrigerate for up to 2 hours to set the chocolate glaze.

Notes

  • For a richer flavor, consider adding a teaspoon of espresso powder to the cookie dough.
  • You can substitute the vanilla pudding with chocolate pudding for a double chocolate experience.
