  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup whole milk, warmed to about 110°F
  • 2 large eggs
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup pastry cream (store-bought or homemade)
  • Powdered sugar, for dusting

Instructions

  1. Warm the milk slightly and dissolve the yeast in it. Allow this mixture to rest for about 5 minutes until it becomes bubbly.
  2. In a separate bowl, mix the flour, sugar, and salt together. Create a well in the center and pour in the yeast mixture, along with the eggs, softened butter, and vanilla.
  3. Stir until everything is combined into a cohesive dough.
  4. Transfer the dough to a floured surface and knead it for approximately 5-7 minutes until it feels smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm area for about an hour, or until it has doubled in size.
  6. After the dough has risen, gently deflate it and cut it into 12 equal portions.
  7. Roll each piece into a smooth ball and arrange them on a floured baking sheet.
  8. Cover them again with a towel and allow them to rise for an additional 30 minutes.
  9. Heat vegetable oil in a deep pot to 350°F.
  10. Carefully drop in the dough balls, frying them in batches until they turn a lovely golden brown, which should take about 2-3 minutes per side.
  11. Once fried, lift them out with a slotted spoon and let them drain on paper towels.
  12. Once they have cooled just enough to handle, use a piping bag to inject each doughnut with the creamy filling.
  13. Finally, dust the tops generously with powdered sugar before serving.
