- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup whole milk, warmed to about 110°F
- 2 large eggs
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- 1 cup pastry cream (store-bought or homemade)
- Powdered sugar, for dusting
Instructions
- Warm the milk slightly and dissolve the yeast in it. Allow this mixture to rest for about 5 minutes until it becomes bubbly.
- In a separate bowl, mix the flour, sugar, and salt together. Create a well in the center and pour in the yeast mixture, along with the eggs, softened butter, and vanilla.
- Stir until everything is combined into a cohesive dough.
- Transfer the dough to a floured surface and knead it for approximately 5-7 minutes until it feels smooth and elastic.
- Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm area for about an hour, or until it has doubled in size.
- After the dough has risen, gently deflate it and cut it into 12 equal portions.
- Roll each piece into a smooth ball and arrange them on a floured baking sheet.
- Cover them again with a towel and allow them to rise for an additional 30 minutes.
- Heat vegetable oil in a deep pot to 350°F.
- Carefully drop in the dough balls, frying them in batches until they turn a lovely golden brown, which should take about 2-3 minutes per side.
- Once fried, lift them out with a slotted spoon and let them drain on paper towels.
- Once they have cooled just enough to handle, use a piping bag to inject each doughnut with the creamy filling.
- Finally, dust the tops generously with powdered sugar before serving.
