Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ cup unsalted butter, softened
  • 1 large egg yolk
  • 1 tablespoon cold water
  • 1 cup fresh blueberries
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ½ cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and mix until crumbly.
  3. Stir in the egg yolk and cold water until the dough forms.
  4. Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and refrigerate for 15 minutes.
  5. Bake the crust for 20 minutes or until lightly golden. Remove from the oven and let it cool.
  6. In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and melted butter until smooth.
  7. Pour the mixture into the cooled tart crust. Scatter the fresh blueberries evenly over the top.
  8. Bake the tart for an additional 25-30 minutes, or until the filling is set and slightly firm to the touch.
  9. Remove from the oven and let it cool to room temperature. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a sweeter twist, try adding a tablespoon of honey to the lemon curd mixture before baking.
  • You can substitute raspberries or strawberries for the blueberries for a different flavor profile.
