- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ½ cup unsalted butter, softened
- 1 large egg yolk
- 1 tablespoon cold water
- 1 cup fresh blueberries
- 1 cup granulated sugar
- 3 large eggs
- ½ cup fresh lemon juice
- 1 tablespoon lemon zest
- ½ cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and mix until crumbly.
- Stir in the egg yolk and cold water until the dough forms.
- Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and refrigerate for 15 minutes.
- Bake the crust for 20 minutes or until lightly golden. Remove from the oven and let it cool.
- In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and melted butter until smooth.
- Pour the mixture into the cooled tart crust. Scatter the fresh blueberries evenly over the top.
- Bake the tart for an additional 25-30 minutes, or until the filling is set and slightly firm to the touch.
- Remove from the oven and let it cool to room temperature. Chill in the refrigerator for at least 2 hours before serving.
Notes
- For a sweeter twist, try adding a tablespoon of honey to the lemon curd mixture before baking.
- You can substitute raspberries or strawberries for the blueberries for a different flavor profile.
