- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 1/4 cup coconut oil, melted
- 1/2 cup almond milk
- 1 teaspoon baking powder
- 1 teaspoon dried culinary lavender
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a madeleine pan.
- In a large bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, dried lavender, and salt.
- In another bowl, mix the melted coconut oil, almond milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the fresh blueberries.
- Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
- Bake for 10-12 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
- Allow the madeleines to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra touch, dust the madeleines with powdered sugar before serving.
- You can substitute the blueberries with raspberries or chopped strawberries for a different flavor.
- If you prefer a stronger lavender flavor, increase the dried lavender to 1 1/2 teaspoons.
