Ingredients

  • 1/2 cup almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup coconut oil, melted
  • 1/2 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon dried culinary lavender
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a madeleine pan.
  2. In a large bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, dried lavender, and salt.
  3. In another bowl, mix the melted coconut oil, almond milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the fresh blueberries.
  6. Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
  7. Bake for 10-12 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  8. Allow the madeleines to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra touch, dust the madeleines with powdered sugar before serving.
  • You can substitute the blueberries with raspberries or chopped strawberries for a different flavor.
  • If you prefer a stronger lavender flavor, increase the dried lavender to 1 1/2 teaspoons.
