A delightful recipe for Blueberry Buttercream Chocolates that combines the sweetness of blueberries with rich dark chocolate.

- 1 cup fresh blueberries
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 8 ounces dark chocolate, chopped
- 1 tablespoon coconut oil
Instructions
- In a small saucepan, combine the fresh blueberries and cook over medium heat for about 5 minutes, until they start to break down. Mash them with a fork and strain through a fine mesh sieve to remove the skins. Set aside to cool.
- In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth.
- Stir in the blueberry puree, vanilla extract, and salt until well combined. Refrigerate the buttercream for about 30 minutes to firm it up.
- While the buttercream chills, melt the dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Line a mini muffin tin with paper liners. Spoon a small amount of melted chocolate into each liner, just enough to cover the bottom. Place the tin in the refrigerator for about 10 minutes to set.
- Once the chocolate is set, remove the buttercream from the refrigerator and pipe or spoon a small amount into each chocolate cup, filling them about three-quarters full.
- Top each buttercream-filled cup with the remaining melted chocolate, ensuring the buttercream is completely covered. Tap the tin gently to remove any air bubbles.
- Refrigerate the chocolates for at least 30 minutes to set completely. Once set, remove from the tin and enjoy!
Notes
- For a different flavor, substitute raspberries or strawberries for the blueberries.
- Add a pinch of lemon zest to the buttercream for a refreshing citrus twist.
