Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 8 ounces dark chocolate, chopped
  • 1 tablespoon coconut oil

Instructions

  1. In a small saucepan, combine the fresh blueberries and cook over medium heat for about 5 minutes, until they start to break down. Mash them with a fork and strain through a fine mesh sieve to remove the skins. Set aside to cool.
  2. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth.
  3. Stir in the blueberry puree, vanilla extract, and salt until well combined. Refrigerate the buttercream for about 30 minutes to firm it up.
  4. While the buttercream chills, melt the dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  5. Line a mini muffin tin with paper liners. Spoon a small amount of melted chocolate into each liner, just enough to cover the bottom. Place the tin in the refrigerator for about 10 minutes to set.
  6. Once the chocolate is set, remove the buttercream from the refrigerator and pipe or spoon a small amount into each chocolate cup, filling them about three-quarters full.
  7. Top each buttercream-filled cup with the remaining melted chocolate, ensuring the buttercream is completely covered. Tap the tin gently to remove any air bubbles.
  8. Refrigerate the chocolates for at least 30 minutes to set completely. Once set, remove from the tin and enjoy!

Notes

  • For a different flavor, substitute raspberries or strawberries for the blueberries.
  • Add a pinch of lemon zest to the buttercream for a refreshing citrus twist.
