- 1 cup rolled oats
- 1 cup ground almonds
- 1 cup dried blueberries
- 1/2 cup creamy almond butter
- 1/4 cup maple syrup or honey
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1/4 cup unsweetened shredded coconut (optional, for coating)
Instructions
- In a spacious bowl, mix together the rolled oats, ground almonds, dried blueberries, almond butter, maple syrup or honey, vanilla extract, cinnamon, and sea salt until everything is thoroughly blended and a cohesive dough forms.
- If the mixture appears too crumbly, incorporate a bit more almond butter or syrup; conversely, if it’s overly sticky, sprinkle in additional ground almonds.
- Once the mixture is well combined, take small portions and shape them into bite-sized spheres, roughly 1 inch in diameter.
- For an added flavor and texture, roll the formed bites in shredded coconut if desired.
- Arrange the energy bites on a tray lined with parchment paper.
- Chill in the refrigerator for at least 30 minutes to allow them to set before enjoying.

- For a chocolatey flavor, mix in 2 tablespoons of cocoa powder or coat the bites in melted dark chocolate.
