Description
Delicious blackberry dumplings served with a sweet blackberry sauce.
Ingredients
Scale
- 2 cups fresh blackberries
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 cup water
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup milk
- 4 tablespoons unsalted butter, melted
- 1 teaspoon ground cinnamon
Instructions
- In a medium saucepan, combine the blackberries, ½ cup of sugar, lemon juice, water, and vanilla extract. Cook over medium heat until the blackberries start to break down and the mixture begins to bubble, about 5-7 minutes. Remove from heat and set aside.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and remaining ½ cup of sugar.
- In a separate bowl, combine the milk and melted butter. Pour the milk mixture into the dry ingredients and stir until just combined; do not overmix.
- Bring the blackberry mixture back to a gentle simmer.
- Using a spoon, drop heaping tablespoons of the dumpling batter into the simmering blackberry mixture.
- Cover the pot with a lid and let the dumplings steam for about 15 minutes without lifting the lid.
- After 15 minutes, check the dumplings for doneness; they should be fluffy and cooked through.
- Serve warm, spooning the blackberry sauce over the dumplings.
Notes
- For a richer flavor, add a pinch of nutmeg to the dumpling batter.
- You can substitute the blackberries with blueberries or raspberries for a different fruit variation.
- For an extra touch, serve with a scoop of vanilla ice cream on top.
