Decadent Black Bean Avocado Brownies that are guilt-free and delicious!

- 1 can (15 ounces) black beans, rinsed and drained
- 1 ripe avocado, peeled and pitted
- 1/2 cup unsweetened cocoa powder
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
- In a food processor, blend the black beans and avocado until they form a smooth mixture.
- Add in the cocoa powder, honey or maple syrup, melted coconut oil, vanilla extract, baking powder, and salt, and continue blending until everything is well combined and creamy.
- If using chocolate chips, gently mix them into the batter using a spatula.
- Transfer the brownie mixture into the prepared baking dish, smoothing the top with the spatula.
- Bake for 25-30 minutes, checking for doneness with a toothpick; it should come out mostly clean.
- Once baked, let the brownies cool in the pan for about 10 minutes before cutting them into squares.
Notes
- Enhance the chocolate flavor by incorporating a teaspoon of espresso powder into the mix.
- For a vegan alternative, replace honey or maple syrup with agave syrup.
