Decadent Black Bean Avocado Brownies that are guilt-free and delicious!


Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 ripe avocado, peeled and pitted
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper.
  2. In a food processor, blend the black beans and avocado until they form a smooth mixture.
  3. Add in the cocoa powder, honey or maple syrup, melted coconut oil, vanilla extract, baking powder, and salt, and continue blending until everything is well combined and creamy.
  4. If using chocolate chips, gently mix them into the batter using a spatula.
  5. Transfer the brownie mixture into the prepared baking dish, smoothing the top with the spatula.
  6. Bake for 25-30 minutes, checking for doneness with a toothpick; it should come out mostly clean.
  7. Once baked, let the brownies cool in the pan for about 10 minutes before cutting them into squares.

Notes

  • Enhance the chocolate flavor by incorporating a teaspoon of espresso powder into the mix.
  • For a vegan alternative, replace honey or maple syrup with agave syrup.
