A delightful Biscoff Strawberry Cheesecake recipe that combines the rich flavors of Biscoff cookies with fresh strawberries.


Ingredients

  • 1 ½ cups Biscoff cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, hulled and sliced
  • ¼ cup strawberry jam

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine Biscoff cookie crumbs and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. Bake for 10 minutes, then remove from the oven and let cool.
  5. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  6. Gradually add the granulated sugar and continue to beat until well combined.
  7. Mix in the vanilla extract.
  8. Add the eggs one at a time, mixing well after each addition.
  9. Finally, fold in the sour cream until smooth.
  10. Pour the cream cheese mixture over the cooled crust in the springform pan.
  11. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  12. Turn off the oven and leave the cheesecake inside for an additional hour to cool slowly.
  13. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  14. Once chilled, spread the strawberry jam over the top of the cheesecake.
  15. Arrange the sliced strawberries on top for garnish.
  16. Slice and serve.

Notes

  • For a lighter version, substitute low-fat cream cheese and Greek yogurt for the sour cream.
  • For a chocolate twist, drizzle melted chocolate over the top before serving.
