Ingredients

  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 2 tablespoons matcha green tea powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Fresh berries and mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Refrigerate for 30 minutes to set.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add powdered sugar, mixing until well incorporated.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Sift the matcha powder into the cream cheese mixture, add vanilla extract and salt, and fold until the matcha is evenly distributed and the mixture is smooth.
  5. Pour the matcha cheesecake filling over the chilled crust, spreading it evenly. Cover with plastic wrap and refrigerate for at least 4 hours or until set, preferably overnight.
  6. Once set, carefully remove the cheesecake from the springform pan. Garnish with fresh berries and mint leaves if desired. Slice and serve chilled.

  • For a chocolate twist, add ¼ cup of cocoa powder to the cream cheese mixture for a matcha-chocolate cheesecake.
