Instructions

- In a large mixing bowl, beat the softened butter and granulated sugar together until airy and pale, about 3-4 minutes.
- Incorporate the egg yolk, lemon zest, lemon juice, dried lavender, and vanilla extract into the butter-sugar blend, stirring until well mixed.
- Slowly fold in the dry ingredients, ensuring not to overmix; the dough should feel slightly crumbly yet cohesive.
- Take approximately 1 tablespoon of the dough and roll it into a ball, placing each ball on the prepared baking sheet with a 2-inch gap between them.
- Create a small well in the center of each ball using your thumb or a spoon.
- Bake the cookies for 12-15 minutes, or until the edges turn a light golden brown.
- After removing them from the oven, let them rest for about 5 minutes, then gently press the centers again to deepen the wells.
- Fill each well with about 1 teaspoon of lemon curd.
