Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 cup unsalted butter, softened
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • For the Spicy Tomato Bourbon Preserve:
  • 2 cups halved cherry tomatoes
  • 1/2 cup granulated sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup bourbon
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a separate bowl, mix the flour, baking powder, and sea salt until well combined.
  3. In a larger bowl, cream together the softened butter, grated cheddar cheese, confectioners’ sugar, vanilla extract, garlic powder, and onion powder until smooth and fluffy.
  4. Gradually incorporate the dry ingredients into the wet mixture, stirring until a cohesive dough forms.
  5. Take spoonfuls of the dough and roll them into balls, placing them on the prepared baking sheet with enough space between each.
  6. Gently press your thumb or the back of a spoon into the center of each ball to create a small well.
  7. Bake the cookies for 12-15 minutes or until the edges turn a light golden brown.
  8. Allow them to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
  9. While the cookies cool, prepare the spicy tomato bourbon preserve by combining halved cherry tomatoes, granulated sugar, apple cider vinegar, bourbon, sea salt, black pepper, and crushed red pepper flakes in a medium saucepan.
  10. Bring the mixture to a boil over medium heat, then reduce to a gentle simmer and cook for 20-25 minutes, stirring occasionally, until it thickens and the tomatoes soften.
  11. Remove from heat and let it cool down.
  12. Once the cookies have cooled, fill each thumbprint with a generous spoonful of the spicy tomato bourbon preserve.
