Ingredients

  • 2 pounds beef tail, cut into sections
  • 1 tablespoon vegetable oil
  • 1 large onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine (preferably Burgundy)
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup button mushrooms, quartered
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large Dutch oven or heavy pot, heat the vegetable oil over medium-high heat. Add the beef tail sections and brown them on all sides, about 8-10 minutes. Remove the beef and set aside.
  2. In the same pot, add the diced onion and sliced carrots. Sauté for about 5 minutes until the onion is translucent. Add the minced garlic and cook for another minute.
  3. Return the browned beef to the pot. Pour in the red wine and beef broth, then stir in the tomato paste, thyme, bay leaf, salt, and pepper. Bring to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for 2.5 to 3 hours, or until the meat is tender and falling off the bone. Stir occasionally and check the liquid level; add more broth if necessary.
  5. About 30 minutes before serving, add the quartered mushrooms to the pot. If you prefer a thicker sauce, mix the flour with a little water to create a slurry and stir it into the stew.
  6. Once cooked, remove the bay leaf and adjust seasoning if needed. Serve hot, garnished with fresh parsley.

Notes

  • For added depth of flavor, consider adding a few strips of bacon when sautéing the vegetables.
  • Serve with crusty bread or over mashed potatoes for a heartier meal.
