A classic and hearty dish featuring tender beef tail simmered in red wine and aromatic vegetables.

- 2 pounds beef tail, cut into sections
- 1 tablespoon vegetable oil
- 1 large onion, diced
- 2 carrots, sliced
- 3 cloves garlic, minced
- 2 cups red wine (preferably Burgundy)
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup button mushrooms, quartered
- 2 tablespoons all-purpose flour (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large Dutch oven or heavy pot, heat the vegetable oil over medium-high heat. Add the beef tail sections and brown them on all sides, about 8-10 minutes. Remove the beef and set aside.
- In the same pot, add the diced onion and sliced carrots. Sauté for about 5 minutes until the onion is translucent. Add the minced garlic and cook for another minute.
- Return the browned beef to the pot. Pour in the red wine and beef broth, then stir in the tomato paste, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 2.5 to 3 hours, or until the meat is tender and falling off the bone. Stir occasionally and check the liquid level; add more broth if necessary.
- About 30 minutes before serving, add the quartered mushrooms to the pot. If you prefer a thicker sauce, mix the flour with a little water to create a slurry and stir it into the stew.
- Once cooked, remove the bay leaf and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
Notes
- For added depth of flavor, consider adding a few strips of bacon when sautéing the vegetables.
- Serve with crusty bread or over mashed potatoes for a heartier meal.
