Ingredients

  • 1 pound beef kidney
  • 1/2 cup tallow
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 skewers

Instructions

  1. Soak the skewers in water for 30 minutes to prevent burning.
  2. Cut the beef kidney into bite-sized pieces.
  3. In a bowl, mix tallow, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Toss the kidney pieces in the tallow mixture until well coated.
  5. Thread the kidney pieces onto the skewers.
  6. Preheat the grill to medium-high heat.
  7. Grill the skewers for about 10-12 minutes, turning occasionally.
  8. Brush with additional tallow halfway through cooking.
  9. Remove from grill and let rest for a few minutes before serving.
