Description
A delicious and easy recipe for Beef Egg Muffins with Sausage & Cheddar, perfect for breakfast or meal prep.
Ingredients
Scale
- 1 pound ground beef
- 1 cup cooked breakfast sausage, crumbled
- 1 cup shredded cheddar cheese
- 8 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup chopped bell peppers (optional)
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
- In a mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
- Add the cooked ground beef, crumbled sausage, shredded cheddar cheese, and any optional bell peppers or green onions to the egg mixture. Stir until everything is evenly distributed.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
- Allow the muffins to cool in the pan for 5 minutes before removing them. Serve warm or let them cool completely and store in an airtight container in the refrigerator.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the egg mixture.
- Substitute the ground beef with ground turkey or chicken for a lighter option.
