Ingredients

- 3 pounds beef chuck roast
- 1 onion, quartered
- 4 cloves garlic
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 teaspoon cumin
- 1 teaspoon oregano
- 4 cups beef broth
- 12 corn tortillas
- Chopped cilantro for garnish
- Chopped onions for garnish
- Lime wedges for serving
Instructions
- In a large pot, toast the guajillo and ancho chiles until fragrant.
- Add the toasted chiles, onion, garlic, cumin, oregano, and beef broth to a blender and blend until smooth.
- Pour the sauce over the beef chuck roast in a slow cooker and cook on low for 8 hours.
- Once the beef is tender, shred it using two forks.
- Heat tortillas on a griddle, fill with shredded beef, and fold over.
- Serve with chopped cilantro, onions, and lime wedges.
Notes
- For a spicier version, add more chiles.
- Best served with consommé on the side for dipping.
