Ingredients

  • 3 pounds beef chuck roast
  • 1 onion, quartered
  • 4 cloves garlic
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 4 cups beef broth
  • 12 corn tortillas
  • Chopped cilantro for garnish
  • Chopped onions for garnish
  • Lime wedges for serving

Instructions

  1. In a large pot, toast the guajillo and ancho chiles until fragrant.
  2. Add the toasted chiles, onion, garlic, cumin, oregano, and beef broth to a blender and blend until smooth.
  3. Pour the sauce over the beef chuck roast in a slow cooker and cook on low for 8 hours.
  4. Once the beef is tender, shred it using two forks.
  5. Heat tortillas on a griddle, fill with shredded beef, and fold over.
  6. Serve with chopped cilantro, onions, and lime wedges.
