  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup cold water
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 cup potatoes, peeled and diced
  • 1/2 cup frozen peas
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add the chopped onion and garlic, cooking until the onion is translucent.
  3. Stir in the cumin, paprika, and black pepper. Add the diced potatoes and enough water to cover them. Simmer until the potatoes are tender, about 10-15 minutes. Stir in the frozen peas and cook for an additional 2 minutes. Remove from heat and let cool.
  4. Preheat the oven to 400°F. On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles using a 4-inch round cutter.
  5. Place a spoonful of the beef and potato filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  6. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  7. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.

Notes

  • For a spicier filling, add diced jalapeños or a pinch of cayenne pepper to the beef mixture.
  • Substitute ground turkey or chicken for the beef for a lighter option. You can also add cheese to the filling for extra flavor.
