- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup cold water
- 1 pound ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 cup potatoes, peeled and diced
- 1/2 cup frozen peas
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add the chopped onion and garlic, cooking until the onion is translucent.
- Stir in the cumin, paprika, and black pepper. Add the diced potatoes and enough water to cover them. Simmer until the potatoes are tender, about 10-15 minutes. Stir in the frozen peas and cook for an additional 2 minutes. Remove from heat and let cool.
- Preheat the oven to 400°F. On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles using a 4-inch round cutter.
- Place a spoonful of the beef and potato filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
Notes
- For a spicier filling, add diced jalapeños or a pinch of cayenne pepper to the beef mixture.
- Substitute ground turkey or chicken for the beef for a lighter option. You can also add cheese to the filling for extra flavor.
