Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup shredded coconut
- 2 tablespoons Blue Majik powder
- 1/4 cup chia seeds
- 1/4 cup mini dark chocolate chips
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), shredded coconut, Blue Majik powder, chia seeds, mini dark chocolate chips, vanilla extract, and sea salt.
- Mix all the ingredients together until well combined. If the mixture is too dry, add a little more almond butter or honey.
- Once mixed, use your hands to form small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store the energy balls in an airtight container in the refrigerator for up to 1 week.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter.
- Add a tablespoon of flaxseed meal for an extra boost of omega-3 fatty acids.
