Ingredients

  • 3 ripe bananas, sliced
  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter.
  2. In a small saucepan over medium heat, melt the butter. Stir in the brown sugar until dissolved. Pour this mixture into the bottom of the prepared cake pan.
  3. Arrange the sliced bananas evenly over the brown sugar mixture in the pan.
  4. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  5. In a large bowl, beat the granulated sugar and eggs together until light and fluffy. Add the vanilla extract and mix well.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  7. Pour the batter over the bananas in the cake pan, spreading it evenly.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then carefully invert it onto a serving plate. Let it cool completely before slicing.

Notes

  • For added flavor, sprinkle chopped walnuts or pecans on top of the bananas before pouring in the batter.
  • Substitute half of the all-purpose flour with whole wheat flour for a healthier twist.
