A deliciously unique Banana Upside Down Cake recipe that combines ripe bananas with a sweet brown sugar topping.

- 3 ripe bananas, sliced
- 1/4 cup unsalted butter
- 1/2 cup brown sugar, packed
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter.
- In a small saucepan over medium heat, melt the butter. Stir in the brown sugar until dissolved. Pour this mixture into the bottom of the prepared cake pan.
- Arrange the sliced bananas evenly over the brown sugar mixture in the pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the granulated sugar and eggs together until light and fluffy. Add the vanilla extract and mix well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
- Pour the batter over the bananas in the cake pan, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then carefully invert it onto a serving plate. Let it cool completely before slicing.
Notes
- For added flavor, sprinkle chopped walnuts or pecans on top of the bananas before pouring in the batter.
- Substitute half of the all-purpose flour with whole wheat flour for a healthier twist.
