Description

Baked Feta Shakshuka is a delicious Mediterranean-inspired dish featuring eggs poached in a spicy tomato sauce, topped with creamy baked feta cheese.


Ingredients

  • 1 block of feta cheese
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (28 ounces) crushed tomatoes
  • 1 red bell pepper, chopped
  • 4 large eggs
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent.
  3. Add ground cumin and smoked paprika, stirring for about 1 minute.
  4. Stir in crushed tomatoes and red bell pepper. Simmer for 10 minutes.
  5. Make four wells in the sauce and gently crack an egg into each well.
  6. Place the block of feta in the center of the skillet.
  7. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the feta is golden.
  8. Season with salt and pepper, and garnish with fresh parsley before serving.
