- 4 ounces semisweet chocolate
- 2 tablespoons unsalted butter
- 2 large eggs, separated
- 1/4 cup granulated sugar
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- Powdered sugar for dusting
Instructions
- Preheat your oven to 375°F (190°C) and grease ramekins.
- Melt chocolate and butter together in a double boiler, stirring until smooth.
- In a separate bowl, whisk egg yolks, sugar, and vanilla until light and creamy.
- Fold chocolate mixture into egg yolk mixture.
- In another bowl, beat egg whites and cream of tartar until stiff peaks form.
- Gently fold egg whites into the chocolate mixture until just combined.
- Pour into prepared ramekins and bake for 12-15 minutes.
- Serve immediately dusted with powdered sugar.
Notes
- Serve soufflés right out of the oven for the best texture.
- Make sure not to overmix the batter after adding the egg whites.
