Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a spacious bowl, mix together the almond flour, coconut flour, sugar, baking powder, and salt until well combined.
- Incorporate the chilled butter into the dry mixture, using your fingertips or a pastry cutter to create a crumbly texture.
- In another bowl, whisk the eggs, vanilla extract, and almond milk together until smooth.
- Gradually add the wet ingredients to the dry mixture, stirring gently until just combined.
- If desired, fold in the sliced almonds for added crunch.
- Transfer the dough onto a surface lightly dusted with almond flour and knead it gently until it forms a cohesive ball.
- Shape the dough into a round disc about 1 inch thick, then cut it into 8 equal wedges.
- Arrange the wedges on the prepared baking sheet and bake for 20-25 minutes, or until they turn a lovely golden brown.
- Let the scones cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
