Almond milk coffee jello is a delightful treat!


Ingredients

Scale
  • 2 cups unsweetened almond milk
  • 1 cup brewed coffee, cooled
  • 1/4 cup granulated sugar
  • 2 tablespoons gelatin powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small saucepan, combine 1/2 cup of almond milk and the sugar. Heat over low heat, stirring until the sugar is dissolved. Do not let it boil.
  2. In a separate bowl, sprinkle the gelatin powder over the remaining 1 1/2 cups of almond milk and let it sit for about 5 minutes to bloom.
  3. Once the gelatin has bloomed, add the warm almond milk and sugar mixture to the bowl with the gelatin. Stir until the gelatin is completely dissolved.
  4. Add the brewed coffee, vanilla extract, and a pinch of salt to the mixture. Stir well to combine.
  5. Pour the mixture into a mold or individual serving cups. Refrigerate for at least 4 hours, or until set.
  6. Once set, gently run a knife around the edges of the jello to help release it from the mold if using one. Serve chilled.

Notes

  • For a sweeter jello, increase the sugar to 1/3 cup.
  • Add a layer of whipped coconut cream on top before serving for an extra treat.
