Almond milk coffee jello is a delightful treat!
Ingredients

- 2 cups unsweetened almond milk
- 1 cup brewed coffee, cooled
- 1/4 cup granulated sugar
- 2 tablespoons gelatin powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a small saucepan, combine 1/2 cup of almond milk and the sugar. Heat over low heat, stirring until the sugar is dissolved. Do not let it boil.
- In a separate bowl, sprinkle the gelatin powder over the remaining 1 1/2 cups of almond milk and let it sit for about 5 minutes to bloom.
- Once the gelatin has bloomed, add the warm almond milk and sugar mixture to the bowl with the gelatin. Stir until the gelatin is completely dissolved.
- Add the brewed coffee, vanilla extract, and a pinch of salt to the mixture. Stir well to combine.
- Pour the mixture into a mold or individual serving cups. Refrigerate for at least 4 hours, or until set.
- Once set, gently run a knife around the edges of the jello to help release it from the mold if using one. Serve chilled.
Notes
- For a sweeter jello, increase the sugar to 1/3 cup.
- Add a layer of whipped coconut cream on top before serving for an extra treat.
