- 1 pound pork tenderloin, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Wooden or metal skewers
Instructions
- Cut the pork tenderloin into 1-inch cubes and place them in a large bowl.
- In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper.
- Pour the marinade over the pork cubes and toss to coat evenly.
- Cover the bowl and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat the air fryer to 400°F.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated pork onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers in the air fryer basket in a single layer, making sure they are not overcrowded.
- Cook for 10-12 minutes, turning halfway through, until the pork is cooked through and reaches an internal temperature of 145°F.
- Once cooked, remove the skewers from the air fryer and let them rest for 5 minutes before serving.
- Serve with pita bread, tzatziki sauce, and a side of Greek salad.
Notes
- For added flavor, try marinating the pork overnight.
- You can substitute chicken or beef for the pork if desired.
- For a spicy kick, add a pinch of red pepper flakes to the marinade.
