- 1 cup Medjool dates, pitted
- 1/2 cup natural peanut butter
- 1/2 cup dark chocolate chips
- 1/4 cup unsalted roasted peanuts, chopped
Instructions
- In a food processor, blend the pitted Medjool dates until they form a sticky paste. If the dates are too dry, you can add a teaspoon of water to help them blend.
- Line a small baking dish (about 8×4 inches) with parchment paper. Press the date mixture evenly into the bottom of the dish to form a base layer.
- Spread the peanut butter evenly over the date layer. Make sure to cover it completely.
- Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Pour the melted chocolate over the peanut butter layer, spreading it evenly.
- Sprinkle the chopped roasted peanuts on top of the melted chocolate, pressing them down gently to adhere.
- Place the dish in the refrigerator for at least 1 hour to allow the chocolate to set.
- Once set, lift the parchment paper to remove the bars from the dish. Cut into squares or rectangles and serve.
Notes
- For a salted caramel flavor, sprinkle a little sea salt on top of the chocolate before it sets.
- Substitute almond butter for peanut butter for a nut-free option using sunflower seed butter.
