- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup chopped fresh parsley
- Oil for frying
Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much moisture as possible.
- In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and parsley. Mix until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- These fritters can be baked instead of fried for a healthier option.
